Baking temperature and preparation time

Circulating air: approx. 15 - 20 minutes at 200 °C
Top and bottom heat: approx. 15 - 20 minutes at 220 °C

Preparation time: approx. 15 minutes + resting time + baking time

Ingredients (for approx. 8 rolls)


- 135 g whole spelt flour
- 135 g wheat flour
- 30 g organic grape seed flour
- 200 ml lukewarm water
- 1 packet dry yeast
- 1/2 packet baking powder
- 1 tsp. salt
- 1 tsp. sugar
- 2 tbsp. oil

Preparation

1st) First, in a large mixing bowl, mix whole spelt flour, wheat flour, grapeseed flour, salt and baking powder.


2) In another small container, dissolve the dry yeast with the sugar in the lukewarm water.


3) Now add the yeast water and the oil to the flour and knead vigorously with the dough hook of the hand mixer to form a uniform dough. If necessary, add some more spelt or wheat flour to the dough if it is too sticky or some lukewarm water if it is too dry.


4) Divide the dough into 8 equal portions, form into small balls and place on a baking tray lined with baking paper.


5) Leave the tray with the dough in a warm place to rise for at least 30 minutes.

6) Put a deep baking tray in the lowest rack of the oven and fill it with about 1 liter of water. Now preheat the oven.

7) After resting, cut the rolls lightly with a sharp knife and brush them with water.


8.) Bake the rolls in the oven for 15-20 minutes. They are ready when they sound hollow when you tap the bottom.
